The flavonoids in blueberries help protect and strengthen the walls of the blood vessels and capillaries throughout the body and improve nocturnal vision.
Now that frozen wild blueberries are widely available year-round in supermarkets, this shake would be an ideal vegetarian breakfast or snack.
Blueberry Blast Shake
375 ml (1 1/2 cups) purified water
250 ml (1 cup) frozen blueberries
2 medium or 3 small frozen bananas, cut into chunks
30 ml (2 tbsp) raw almond or cashew butter
15 ml (1 tbsp) raw honey or agave nectar
In a blender, place water, blueberries, bananas, nut butter and honey and blend on medium until smooth, 30 to 45 seconds. Expect tiny bits of blueberry skin throughout this shake.
Serve in glasses.
Makes 2 servings.
